In the Omaha metropolitan area, the nonprofit Saving Grace Perishable Food Rescue collects foods that are past their “sell-by” date, but still edible, from local grocery stores to redistribute them to nonprofit food pantries. The organization operates on a shoestring budget of $350,000 a year, employing only a truck driver and program manager in addition to founder Beth Ostdiek Smith. The food they provide to pantries, including substantial amounts of fresh produce, helps individuals and families get through times of financial stress.
